Crab Cake Recipe
Crab cake with avocado sauce and fresh corn and serrano chile salsa
In Ecuador we don’t have “Crab Cakes” but since I love both cuisines, the American and Ecuadorian, I decided to combined them together. I love this crab cake because they are so light yet delicious. The cilantro, avocado and salsa add a little taste of my beautiful land.
2 cups of lump crabmeat
2 table spoons of dijon mustard
1/4 cup of mayo
1/4 cup roasted red peppers chopped
3 scallions chopped
2 garlic cloves
1/4 c panko ( and 1 C for rolling)
1 tbsp old bay
1 tsp cayenne pepper
1 lime juice
Salt and pepper tt
Mix all the ingredients together. Form the mixture into about 12 – 14 crab cakes, about 2 tablespoons each, then roll each crab cake in the extra cup of panko. Put on a parchment paper-lined baking sheet, cover with plastic wrap and refrigerate at least 30 minutes.
Heat the butter and olive oil for frying over medium heat in a large saute pan. Add the crab cakes and fry 4 – 5 minutes on each side until golden brown.
1 tbsp mayo
1 lemon juice
1 – 2 tbsp water
salt and pepper to taste
Add the ingredients in a food processor or blender.
Fresh corn and serrano chile salsa
3 ear corn, husk, silk removed and grilled
1/4 C roasted read peppers chopped
2 tbsp cilantro chopped
1 serrano chile chopped very small
salt and peper tt
In a bowl, add all the ingredients and mix.
in a platter or plate sauce the plate with the avocado sauce, add the crab cakes and top with the corn salsa and lots of cilantro. Enjoy!
